Botanical Name:Enchylaena tomentosa

Ruby saltbush is a low growing shrub up to 1m in height. The succulent green leaves are up to 2cm long and are covered in small white hairs. Insignificant flowers are followed by berries that are about 5-8mm in diameter, ranging in colour from yellow to red. There are often different coloured berries on the plant at one time making a colourful display.

Growing Conditions

Ruby saltbush will tolerate a variety of soils including sandy, clay, loam and salty soils. It will do well in a semi-shaded position or in the full sun. Ruby saltbush will tolerate hot dry periods as well as frost.

Culinary Uses

Eat the ripe red berries straight from the bush raw, they have a crisp salty flavour. Add the berries to salads, fruit salads or as an edible garnish to any meal. Indigenous groups of the Macdonell Ranges (central Australia) have soaked the fruits in water to make a sweetened tea.

The leaves are edible only in small amounts as they contain large amounts of oxalates. They can be cooked like spinach. Cooking the leaves will greatly reduce the oxalic acid content.
