Botanical Name: Allium schoenoprasum

Chives are a perennial herb, they have hollow tubular leaves and grow in clumps. The flowers are a pale pink/purple and are like pom poms. Chives flower in spring. Chives look good in the garden as a border or grown in clumps throughout the cottage garden.

The delicate onion taste of chives combines nicely with other delicate herbs like chervil. Add the chopped leaves to egg dishes, salmon, or sandwiches, sprinkle on mashed potato or baked potato or over a salad.

Chives can be used to enhance the flavour of almost any meal without overtaking. Chives cannot withstand cooking and so is best added just before serving. The fine narrow leaves make an attractive edible garnish. The flowers can be sprinkled on salad or added to herb vinegars to give a delicate pink hue.

Growing Conditions

Chives like a well drained soil, in a sunny to part-sun position, while they will tolerate poor soil they will thrive in a rich soil. In cold regions, chives die back to the underground bulbs in winter, with the new leaves appearing in early spring. If plants are looking a little tired after winter, cut the leaves back to about 2 cm above the ground.
